I Cook - Gluten Free Peanut Butter Choc Chip Cookies

My first cooking post! I've found it really hard to find recipes which use just gluten free flour and not hard to find ingredients like certain other flours. 'Gluten Free Flour' can easily be found in most supermarkets.

These cookies always go down well and are perfect for this cold weather by the fire with a cuppa! 
They come up really soft and melty and gooey on the inside.. mmm!

What you'll need
(Makes around 12):

- 225g unsalted butter (Leave this out of the fridge for a while before you start, so it mixes well and isn't too solid!)
- 200g caster sugar
- 200g soft light brown sugar
- 2 eggs 
- 3/4 teaspoon vanilla extract
- 240g peanut butter (crunchy or smooth - you decide!)
- 340g plain gluten free flour
- 2 1/2 teaspoons bicarbonate of soda
- big pinch of salt
- 75g of chocolate (milk or dark - you chose!)

- Baking tray & greaseproof paper

What to do:

- Turn the oven to 170c and get it heated up while you begin the mixture.
- Mix the butter and sugars in a bowl until they turn nice and fluffy and light.

- Add in one egg at a time to the mixture, mixing after each one and then beat in the vanilla extract and then the peanut butter
- After this is all mixed, then add the flour, bicarbonate of soda and salt then mix until a smooth dough forms.

- Chop up the chocolate into small chunks and stir it in until evenly dispersed. 
- Prep your baking tray by greasing the tray and lining it with greaseproof paper. Then, dollop equal amounts of cookie dough on the tray. Leave space for the cookies to spread while cooking - you will probably get about 6 cookies per tray.

- Bake in the oven for around 10 - 15 minutes, until they are golden brown around the edges.
- Take them out of the oven and leave to cool.
- Enjoy under a blanket watching a Christmas movie!
